maybe daft question, but how can I disable mass airdrop ?

As mass drop is an option you just dont use it or grant the permission to use it to anyone, it wont do it by itself.

I was using automated mass drop however want to stop using due to double amount of drops. But there is no simple option to enable/disable it.

There is no default mass drop setting in Fancy Drop, you set the amount of airdrops, the amount of crates, the time between drops and the amount of items in the drops,
The only change i can see that might help is in the "massdrop" settings

"Massdrop default plane amount": 5,

Set it to 1

It did not work. However I disabled timers and it removed massdrop for now.
