every thime server restarts stack size gos back to default

Before you adjust the stacksizecontroller data\StackSizeController.json file you must either stop the server or unload stacksize controller,
When either is done you can then adjust the data\StackSizeController.json to the settings you want, THEN save it and then restart the server or reload stacksizecontroller, it will not save settings in the data file while the plugin is running,
