You can still set the categories to the size you want , But if you require to change an individual item you can do it in Config and reload plugin without unloading plugin as you dont use the data file to edit.
*Multipliers multiply IndividualItemStackSize definitions not vanilla stack size. Individual multipliers take priority over category stack multipliers.
