Is there a way for this plugin to automatically include all approved skins, so basically all the ones that get released into the shop, and can you display more than one container full of items?

That would be considered piracy, which we do not support here. This plugin is loosely allowed here for the use of freely available workshop skins, not paid ones that users do not own. This plugin is already skirting the allowances from Facepunch.
Just google for Skins.json uMod or Skins.json Rust , there is up to date or any close at GitHub and somewhere else i guess, not be lazy even to use google xD, and check for the latest updated Fork, might be at comments a direct link.
and ofc Bundle DLC things won't work since are in a package hehe but the rest is there ^^,
