Is there a way to make the skin UI larger so people can see what the skins look like easier? Like if the UI could take up the whole screen instead of just the right side. Icons are kind of small

Which one? With items or buttons? You can completely configure buttons UI in configuration, items are impossible to make.larger.

I was wanting to make the item images larger so we could see what the skins look like better. 

That's an in-game box and thw only way you can do this is by changing UI scale I suppose or screen resolution etc.
