I dont see an option to disable the horse sirens.  Ever other mode of transportation is listed to set probabilty but horse is not.

I just updated the plugin (v2.1.2). The changes include a probability for horses, although horses shouldn't get sirens if no probaility is specified. So I investigated and had to fix the probability algorithm. Hope it is working as expected now.
