I've recently seen a few youtube videos that mention the existence of a rock entity (or something) that admins can spawn in, but I can't seem to find any details on how to do it. Does anyone know if this is actually a thing, and how to do it if so??

do just 'spawn rock' it should give you a list of them, or you can look up the prefabs on various lists
