Is there a way to reset permissions for the player who placed the lock so that they no longer have access to it?

I'm not quite sure what you mean by permissions, but you can revoke Oxide permissions using commands.

For instance, I place a lock on a door.  Is there a command I could use that would disable me from having access to that lock?

Not at the moment, but that is something that could be looked into.
