When i reload the plugin with "oxide.reload GUIShop" the config file reset but keep the items and categories that i added. and if i remove a category with a new config file, the category stay in the shop gui after a reload but its not in the config (there is no error in the console).

The config file is not resetting. It auto-adds the missing default values if you delete them.

To disable the default shops set the field on the category to false.. ( As mentioned on the docs )
