I tried remaning the Commands catagory and it would no longer load the catagory until I changed it back, is this by design? Also is it possible to move items to different catagories?

The default generated shops are not removable or changeable. However, you can disable them and remove all the items inside them to shrink down the config a bit. Just create new shops with custom names as intended
