Every item i set to not sell/buy are still showing? It just re-adds them to the config i edit.

Did you manually remove parts of oxide/data for the plugin? If so, make sure you did it while the plugin is unloaded, otherwise it is saved from memory.
You do not remove anything from the config, all of the buy/sell options are true/false in the Config, once you change it to which ever you want... save and o.reload GUIShop and it will correctly make the changes.
This issue is fixed in update 1.8.3 please update to 1.8.4 and add. At the top of your config if you have not already done so.
