When reseting my server (i use gameservers) the permissions for this reset and I need to regrant the permissions to the default user group. Any idea why this happens?

Permissions "resetting" generally means that your data file that stores permissions for Oxide was removed/deleted or your server never saved before shutdown after you assigned them; there's nothing unqiue about this plugin and how it uses them.
