I was wondering if there's any way to customize the loot that drops from the scarecrows spawned by this plugin. Any help would be greatly appreciated

The plugin can only disable loot for the moment. Loot handling will take some time to write and is not easy to configure, I may add it later but for the moment it's not planned.

You should try to find a plugin that can modify it for a HumanNPC. If needed, the scarecrow entity is "ScarecrowNPC".
