Forgive my ignorance but can use this to backup my server offline?  I have had three server crashes this year that meant a total wipe of the server. resulting in some not so happy players "including myself" any assitance would be appreciated thanks.

This is a plugin, it runs while the server is running not while offline. If you want to do backups while your server is offline, you'd need to use a standalone tool or script, not a plugin.

But this plugin will back up the server? then I could download the file to a safe location once a day?

Yes, that's the purpose of the plugin.
