My question is: if I granted basic permissions to the Default group, and then created the VIP group, do I need to grant the same permissions to the VIP group, or do they automatically apply to it (no escape, frunance splitter, etc)?

All players are part of group default.

Yes, all players are in the default group, so they would always have the permissions assigned to that group.
