I already tried 3 different hosting providers, all of them won't show up in EU if hosted in US... it should be like that?

Is there a specific reason why you'd want people so far away from your server to find it? People with high ping are not going to have enjoyable experience nor the players who play against them.
Your only solution is to either host the server closer to EU or to host anycast server to which people connect to from where they're redirected to your actual server.
Players from US in EU servers most likely will be raided while they sleep, because of big time zone difference, we all know how those things work in rust, it's almost like real time job.
So from now on i'm offering servers also for US players, they will have better ping and not that much struggle with sleep.

My server is in the UK and I've had players connecting from Australia, so I don't think distance is the limit. It's more likely to be a limit on the ping.
