The MonumentCooking profile doesn't currently add any entities to those other monuments. You are more than welcome to add cooking-related entities to those monuments if you would like, via the /maspawn command in-game. You can even add them under the same profile to maintain the logical grouping for your server.
The built-in profiles such as MonumentCooking are created and maintained by the community, so you can contribute new coordinates if you would like to share your additions or changes.
The point I was trying to make was ... what if one doesn't know the names of the other monuments? ... so it would be helpful to new users to have placeholders in the files for all momuments (new and old).
I did ultimately use use /maspawn, and then moved the settings over from the default to the cooking file.

It's not clear to me what problem that would solve. Why would the user need to know the names of other monuments? Only knowing the name of the monument doesn't really help you place more addons there, as you would need to know the relative position within the monument that you want to place a new addon at, which you can't really know without some plugin assisting you. The intended way to place more addons is via /maspawn since it simplifies the problem for the user.
Regarding moving the addon from the default profile, for future reference, you can select the profile via /maprofile select MonumentCooking before running /maspawn. You can also move the entity to the new profile while aiming at it with /maprofile moveto MonumentCooking.
