Would love it if you could place another seat behind the pilot, so we can have romantic flights with our partners <3

I don't know if it could be made to fit.  It also might be unfair to the polyamorous, who would then request more seats.  Where will it end?

I think 2 is perfect.  If people want more than 2, they can use the Gyrocopter instead.
