Hi, So I'm using Vanding in stock and Custom vanding setup, Im currently only using CVS to swap the exchange of diesel fuel for Low Grade. 

Players are abusing the restocking system particularly the "Produce exchange" scrap for fertilizer and 16x Scopes for HQM, cloth for scrap, fish. I'm trying to keep this system as close to Vanilla as possbile so I want to keep the exchange but still keep most other items always in stock. (That can't be abused) So what is the best way to combat these kind of exploits? Should I just stop the restock of these items so its more like vanilla and harder to abuse and or slow down the restock timers and amounts? Any Suggestions?

Are there any other items that can be abused if always in stock etc that I might not be aware of?

To be on the safe side, I suggest you only enable instant restock for items that you think are safe, rather than restricting the items that you think are not safe. It appears that Vending In Stock only allows "blacklisting" as opposed to "whitelisting" items. If you prefer the "whitelist" approach, simply uninstall Vending In Stock, then edit every vending machine with Custom Vending Setup and set the Restock Delay to 0 for every item that you think is safe.

As for detecting abuse, ideally you could access stats about what players buy. That would allow you to quickly identify whether players are abusing, simply based on the frequency of certain items being bought/sold. You could try the Vending Machine Logs plugin as a start.
