Q does nothing on the server, and the plugin overwrites the config every time I reload it. Changing the key to e.g.: u doesn't do anything either. Furthermore /craftui.craftui <load / safe> do not exist.

"craftui.craftui" is not a valid command, it would be /craftui.save and /craftui.load. The documentation had it worng, but it has been fixed.
Also, a configuration file resetting would generally imply that it was edited wrongly, either format or being invalid JSON.

Well, I first tried adding items, but then I tried changing simple false to trues. or the default key for the gui. But even the default config wouldn't allow me to open the UI in any way.
