is it possible to use this mod to increase the amount you get of things inside? eg 5x scrap or can that be done in standard config?

You use the config to set default amount for different groups and make your changes in the data\BetterLoot\LootTables.json file.
for individual items, Make the changes when the server is offline , save them and then restart the server,
