We're running a custom loot table on our server and wanted to know on a server update, does the plugin automatically add new items to the loot table at default rates or is it something we have to manually add each update. If so, how do you all approach it?

You will have to manually add any new items. The NamesList.json file is updated every wipe, you can check it for the items, and use a site like rustlabs to see what container is default.
